3 in 1 Buffalo Cauliflower

That’s right, 1 recipe, 3 uses! With this recipe (you can make a big batch and eat off of it for a few days), you can make buffalo cauliflower sloppy joes, buffalo cauliflower over rice, and buffalo cauliflower soup (not pictured because I was too hungry to stop and take a picture that day, oops)! The recipe is full of veggieness and flavor. You’re welcome, I hope you love it as much as I do.

 

So for the batch of buffalo cauliflower mixture, you’ll need…

One head of cauliflower (chopped)

Two carrot sticks (chopped)

Two celery stalks (chopped)

1/2 onion (chopped)

1 8 oz can of tomato paste (I look for organic brands with non-BPA lining)

2 oz hot sauce of your choice (more or less depending on your desired level of spice, I like it HOT!)

1 tbsp. olive oil

Salt and pepper to taste

Heat up the olive oil on medium heat and add your cauliflower, carrots, celery, and onions to sauté. After tossing the vegetables and getting them to a nice simmer, add the tomato paste and work it into the mixture. Once all of these ingredients are comfortable together, add your hot sauce and mix it in nicely. Simmer the mixture until your veggies are tender, then you’re ready to make a dish out of it and store the rest!

To make the buffalo sloppy joes, you can use this mixture on a bun or a your favorite fresh bakery bread. I look for minimally processed buns but a ciabatta bun or Kaiser roll with a recognizable ingredient list from the bakery will do perfectly. Or you can just eat it over brown rice and/or quinoa. You can also mix it with 1/2 cup of vegetable broth to make a soup, and add some crackers on the side (I used Back to Nature’s Organic Stoneground Wheat crackers, which are a must try).
