Chickpea Curry

Easy & Delicious… and for my newbies, hard to mess up! Chickpea Curry has just a few ingredients and tons of flavor. You’ll need…

1 can of chickpeas

1 can of coconut milk

2 tablespoons curry powder

1/2 cup red tomato (diced)

1/4 cup onion (diced)

1/4 cup fresh cilantro (optional)

1 tsp garlic powder

Salt & Pepper to taste

This recipe makes 2-3 servings.

Pour the chickpeas into a medium sized sauce pan and place on a stove set to medium heat. Drain the oily part from the canned coconut milk, and stir the thick part (the white part) into the sauce pan with the chickpeas. Add your tomatoes, onions, cilantro, garlic powder, curry powder, salt, and pepper. Stir well and bring the mixture to a boil. Reduce the heat to low and let this simmer until the onions are tender.

I serve this over jasmine rice and it makes a very good meal. However, add some spiralized or chopped cucumber and you will have next level yumminess! Enjoy and let me know how you like it!
